Ice Box Cookies (January 20, 2010)

to our friend, Eddie, who sent us this recipe in the form of a Christmas card! These are seriously simple and extremely tastey!
This was going to be a "Top Chef" challenge (Use the recipe and add your own flare), but one of the contestants was a bit...we'll say, preoccupied. Really, Andrew was understandably getting in as much R&R before his semester started. Plus, he knew I had already begun thinking about what I wanted to do...So, in the end, there was no way he'd win anyways! ;) After mixing all the ingredients (and let me tell you, an egg beater is on the to-be-purchased list, right next to wax paper) I split half the dough. Wanting to try the recipe as it was originally intended, I set one half aside. With the other half, I mixed in dried cranberries and white chocolate chips.

I noticed that the cookies cooked rapidly. The diiference between 7 minutes and 7 and a half minutes was enormous. Still, the slightly darker, golden brown were just as tastey. And, I might add, nice and chewy too.
A tip for anyone who might want to try and add some "flare," cut your cookie slices thinner. I noticed on some of the larger cookies with the cranberries and chocolate chips inside, the middle wasn't as firm.
